Poppy Seed Pancakes With Strawberries

Here is what you need for this sweet and delicious pancakes: 

2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup sugar
pinch of salt
1/3 cup poppy seeds
zest of 3 lemons
2 cups milk
3 large eggs, lightly beaten
2 tablespoons butter, melted

Combine the flour, sugar, baking powder, baking soda, salt in a large bowl. In another bowl the buttermilk, eggs, butter, lemon zest and poppy seeds. Add the wet to the dry. Stir all the ingredients until they are combined. 

Prepare the pancakes in a pan ( I prepared 7 pancakes ), when it’s done cut the strawberries in two and place them on the pancakes ( I sprinkled a bit of powdered sugar as well).

Healthy & Yummy Breakfast

It was a while since I’ve posted a recipe, but this morning I’ve went to the market and got some really delicious fruits.

So, here is what you need for a delicious breakfast:

  • fruits of your choice ( apple, banana, strawberry, blueberry, pear )
  • whole grain granola
  • low fat yogurt

I’ve chopped the apples, bananas and strawberries in little cubes and place them in a bowl, I’ve added the whole grain granola and poured the yogurt on top.

RED VELVET CUPCAKE & ME

Red Velvet Cupcake For My Birthday!

It was my birthday, I’ve had my sister’s family over and I’ve decided to bake the red velvet cupcakes.

It’s really delicious and easy to bake.

Here is what you need:

  • 300 g butter at room temperature
  • 300 g sugar
  • 300 g flour
  • 4 eggs
  • 8 tablespoons milk
  • 2 teaspoon baking soda
  • 1 teaspoon cacao powder
  • 2-3  Tablespoons red food coloring
  • 1/2 teaspoon vanilla extract

Place all the ingredients in a bowl and mix them with a wooden spoon.

Preheat the oven to 350 degrees F.

Scoop into cupcake papers or silicon, about 1/2 to 3/4 of the way full.

Bake for 20-25 minutes or until a toothpick comes out clean. 

For the frosting you need:

  • 250 g mascarpone
  • 250 g cream cheese at room temperature
  • 150 g powdered sugar
  • 3 dl cold heavy whipping cream
  • 2 packs of Dr. Oetker Whip It

In a bowl beat the whipping cream with the 2 packs of Dr. Oetker Whip It! ( I used the electric mixer ) this way the whipping cream will stay stiff without separating.

In another bowl mix the mascarpone, powdered sugar and cream cheese until smooth and add the whipping cream.

When the cupcakes are cold, arrange them on a serving platter and spoon the frosting on top.

Bruschetta With Tomato & Basil

 This appetizer is easy to make and it’s very tasty.

Here is what you need:

  • 3 Tablespoons Of Olive oil
  • A Handful Of Chopped Basil
  • 4 Tomatoes 
  • 3-4 Cloves of Peeled Garlic 
  • Salt & Black Pepper
  • 4-8 Toasted Bread

Dice the tomatoes into medium size cubes, chop the basil into small pieces, add salt, pepper and olive oil in a bowl.

In the meantime toast the bread. When the bread is toasted rub each piece, only on one side, with the whole garlic pieces.

Top the toasted bread with the tomato mixture.

Hummus Sandwich – Afternoon Snack

Here is a great recipe for an afternoon snack: hummus sandwich.

Hummus is made from cooked, mashed chickpeas. It is rich in iron, vitamin C and B.

For this recipe I used the following ingredients:

  • 2 slices whole wheat or whole grain bread
  • chicken fillets ( you can switch the chicken to turkey, or ditch the meat and use only veggies such as avocado, olives…)
  • favorite hummus ( I used chili hummus, but you can find with olive )
  • fresh baby spinach
  • a few slices of red pepper
Spread hummus on both slices of bread and layer the ingredients.

Avocado Toast

Delicious Toast With Avocado

This recipe is super easy and fast to make.

It’s perfect for breakfast or afternoon snack.

All the ingredients are healthy and you don’t need to be sorry after eating it 🙂

Here is what you need:

  • 2 slices of your favorite bread ( I’m usually using whole wheat bread )
  • 1 avocado
  • juice of a smaller lime
  • 2 teaspoons chopped mint, leave a bit for the top
  • 50g either cottage cheese, goat cheese or feta ( I used also 2 teaspoons of cheese cream with reduced fat, the Philadelphia one ), to make it more creamy
  • olive oil
  • freshly ground pepper

Here is how you make it: 

  • toast your bread
  • halve, pit and peel the avocado, scoop out the flash and place it in a bowl
  • mash the avocado and mix it with lime juice, mint, cottage and cream cheese
  • spread the mixture onto your freshly made toast, sprinkle it with salt and olive oil.
  • place the mint leaves on it

Blueberry Juice

Place 2-3 handful of blueberries with 3-4 carrots, 3-4 apples and 3 oranges in a juicer and you will get a healthy, delicious juice.

Blueberries are very low in Saturated Fat, Cholesterol and Sodium, and a very good source of Vitamin C, Vitamin K and Manganese.

Carrots are an excellent source of vitamin A, and contain vitamins C and B6.

Apples are rich in antioxidant phyto-nutrients flavonoids and polyphenolics. 

Oranges are low in calories, contain no saturated fats or cholesterol, are rich in dietary fiber.

Carrot-Apple-Orange Juice

This morning I’ve made a carrot-apple-orange juice.

It is very delicious and easy to make.

For two persons you need 4 carrots, 4 apples and 4 oranges.

Wash and peel them, core the apples, cut them into larger pieces and place them in the juicer.

Here is the result:

French Toast With Blueberries

Start your morning with French Toast Blueberries.

The recipe is very easy and fast.

You need whole wheat french toast bread, 1 egg, 2 tablespoons of milk, 1 tablespoon of sugar, sprinkle of cinnamon and nutmeg.

Mix the ingredients and place the french toast slices to soak up the egg mixture.

Move the slices to griddle, use butter and let them until they are sugar brown on both sides.

When they are done sprinkle them with powdered sugar and blueberries.
