Here is a great recipe for an afternoon snack: hummus sandwich.
Hummus is made from cooked, mashed chickpeas. It is rich in iron, vitamin C and B.
For this recipe I used the following ingredients:
- 2 slices whole wheat or whole grain bread
- chicken fillets ( you can switch the chicken to turkey, or ditch the meat and use only veggies such as avocado, olives…)
- favorite hummus ( I used chili hummus, but you can find with olive )
- fresh baby spinach
- a few slices of red pepper
Spread hummus on both slices of bread and layer the ingredients.
